Authentic Kermanshah kebab
ingredients:
8 tablespoons of tomato paste / required amount of vitamin D sunflower oil / 4 large pieces of lamb ribs / 2 tablespoons of fresh lemon juice / required amount of salt / required amount of black pepper / required amount of saffron / grilled green pepper 8 pieces / tomatoes 6 pieces / parsley and sumac as needed
How to prepare:
First, chop the mutton ribs into 10-15 cm pieces. Remove excess fat.
The mutton ribs are cut wide and long, and three to four skewers are inserted vertically into the meat with pounded kebab skewers at the same time, so that it supports the weight of the meat and does not distort its shape.
After that, they hit the meat with the back of a sharp knife. Then the meat is kept in the refrigerator for several hours. When the meat has rested completely, it is ready to be grilled.
In advance, they heat some oil in a dish and then pour 8 spoons of tomato paste in it and fry it, then add salt, a little pepper, lemon juice and saffron to it and make a thick sauce.
When grilling, the ribs are placed on medium charcoal fire and at the same time with a brush, they constantly rub the ribs from side to side until the barbecue is ready, and again at the moment of lowering the barbecue, rub the sauce on the meat and quickly in the bread. they let.
For roasting cinnamon, we skewer grilled tomatoes and peppers and put them on the fire until their skin becomes smoky, and add a little salt to it while grilling.
Note: After finishing the work, decorate the kebab plate with cinnamon, onion, lime or orange, and aromatic vegetables such as parsley, basil, tomatoes, and grilled peppers. Preferably, use buttermilk instead of soda, which is healthier and more suitable.
